My name is Echo.
I've been here longer than most people realize. Hidden in plain site, you're about to see more of me as we update our labels.
When our founder Lauren first conceived Swallowtail, her goal was wonderfully simple. She wanted to nourish her growing family.
Money was sometimes tight, but there was always room at the table for wholesome, nourishing food. Yogurt became a staple, and what began as a way to feed her children soon grew into something much larger.
One afternoon, while sitting beneath the lilacs, a swallowtail butterfly landed gently on Lauren's knee. In that quiet moment, she knew the name of the little creamery she hoped to build.
As she painted the watercolor that would become Swallowtail's first label, she imagined me.
Since that day, I've quietly accompanied every jar that has left the creamery.
Today, I watch over more than Swallowtail. I accompany each of our brands as a reminder that craftsmanship is a living thing. Traditions are meant to be honored, but they are also meant to grow.
Every batch begins a second journey.
